Lentils

The Palouse is supposed to be one of the largest producers of lentils in
the U.S., and we claim the reputation, yet we don't serve lentil dishes
in our local restaurants, with exception to Mickeys and the Co-op that
serve them on occasions. Why is this?  Can we buy locally grown lentils
or are they shipped mainly overseas?  And another question, do we mill
our own wheat in the Palouse?
